Saint Hilarian of Espalion, Martyr - 8th century The local legend is that the priest St. Hilarian was beheaded by the Moslems on the hill that is now the site of the 12th century church of St. Hilarian de Perse, just outside of Espalion.  Thus in images he wears a chasuble and holds his detached head in his hands.
